In this 3 day intensive, egg free and gelatin free workshop,as someone with Level 1 chocolate making skills, you will be taken through in-depth techniques that will lead to 11 creations, all that will, in their own, unique ways, add to your chocolate selling and gifting game!
What’s more, once you have learned the basics, the sky's the limit - you can create an infinite number of creations, once you have learned it all in this workshop.
This is a technical class, with focus on chocolate making skills. The techniques you will learn, include:
1. A variety of fillings covered: fruit fillings, flavoured ganaches. cheesecakes, marshmallows, nut pralines, marzipan
2. Hand cut and hand dipped pralines
3. All things cocoa butter - introduction to coloured cocoa butter, understanding how to add oil colours to cocoa butter, getting it to the right working consistency, airbrushing cocoa butter
4. Refreshing your chocolate tempering knowledge
5. Packaging
6. Pricing
7. Safe transportation
8. Sourcing of ingredients
